Busaba chicken puff is our twist to the traditional Thai chicken puff. Chicken puff is a famous snack in Saraburi province where most Thais purchase them on the road or train trips.
THAI CHICKEN PUFF IS BELIEVED TO BE CREATED IN THE 16TH CENTURY DURING AYUDDHAYA ERA (OUR PREVIOUS CAPITAL CITY PRIOR TO BANGKOK). It was created in the palace by the royal chef who was Portuguese, Japanese, and Bengal-born. She also created many famous Thai desserts which are popolar until today.
THAI CHICKEN PUFF GENERALLY MADE WITH THREE-LAYER DOUGH STUFFED WITH CHICKEN, POTATO, ONION, AND SOME SEASONING. IT IS THEN FRIED BEFORE SERVE.
Our version of chicken puff is created slightly different. Stuffing contains chicken, potato, carrot, onion, and green pea wrapped with Indian roti. We season the stuffing with salt, sugar, soy sauce, and yellow curry powder. It is served with sweet chili cucumber relish.
THE FLAKY ROTI COMPLIMENTS OUR COLORFUL STUFFING REALLY WELL. FOR TANGY TOUCH, ADD THE CUCUMBER RELISH ON TOP OF THE PUFF. IT IS BEST WHILE HOT!
